- Monitor, train and manage the junior cooks, trainees, kitchen helpers and assign duties & shifts
- Inspect marinades, flours for different types of breads, mise-en-place
- Cook different types of naan breads, tandoori roti, roomali roti, tandoori paratha, vegetarian and non-vegetarian tandoori snacks and various kinds of kebabs.
- Help and assist the chefs & cooks in other sections of the kitchen (North Indian food, sweets & desserts, chats etc) in case of a shortage of manpower in that department
- Ensure the food quality, taste and the presentation of cooked food before serving.
- Ensure prompt and speedy delivery of the orders
- Maintain stocks of raw ingredients
- Ensure cleanliness of the kitchen, cookware and cooking equipment
- Inspect and Manage cooking stations with all necessary supplies.
- Plan menu for special occasions and festivals
- Introduce new dishes in the menu especially Signature Tandoori Dishes
- Check the quality of ingredients
- Order kitchen Supplies
- Monitor temperature of chillers, freezer and hot holding equipment
- Draft, monitor and manage the SOPs of the operations of his department
